Ingredients:
2 1/2 cups finely chopped apples, peeled, tossed with 1 tablespoon lemon juice

1 cup sugar
1/2 cup shortening
1 1/2 teaspoon baking soda

1 large egg, lightly beaten
1 teaspoon vanilla
1 teaspoon lemon or orange zest
1/8 teaspoon sea or Kosher salt
3/4 cup brown sugar (packed)
1 cup dried cranberries
3/4 cup chopped walnuts (or slivered almonds)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Preparation:
Pre-heat oven to 350 degrees.
Cream the sugar and shortening together for a few minutes, and add the egg and vanilla and mix.
Sift together the flour, baking soda, and salt, and gradually add to the creamed mixture; mix well, the dough will be stiff. Stir in the apples and zest.
Spread batter into a greased 9 X 13 baking pan.
Combine the brown sugar, cranberries, walnuts, cinnamon, and nutmeg in a bowl, and sprinkle evenly over batter.
Bake for 30-35 minutes or until golden brown. Cool and cut into squares.
Makes 12-16 squares.
