This salad features high-protein Kaizen rice (or your favorite grain), blistered cherry tomatoes, fresh herbs, and a bright tahini-lemon dressing made with Soom tahini, and is packed with flavor, texture and plant-based protein. Finished with crunchy pistachios and juicy pomegranate seeds, it is a colorful, wholesome meal perfect for lunch, brunch or any weeknight dinner. (Kaizen rice is a high-protein, low-carb, grain-free, and gluten-free, plant-based rice substitute made from lupini flour, fava bean protein, and tapioca.)

For the salad:

1 package Kaizen rice (or your favorite grain)

1 pint of cherry tomatoes

2 tablespoons extra virgin olive oil

Sea salt and pepper, to taste

1/4 cup fresh dill; chopped

1/4 cup fresh parsley, chopped

1/4 cup pistachios, chopped

1/4 cup pomegranate seeds

 

For the dressing:

1/2 cup Soom Premium or Organic Tahini

1 tablespoon lemon juice

1 tablespoon maple syrup

3 tablespoons water plus more as needed

2 tablespoons extra virgin olive oil

1 tablespoon fresh dill, chopped

Sea salt and pepper, to taste

 

Preparation:

Make the dressing. Whisk together tahini, lemon juice, maple syrup, water, extra virgin olive oil, and fresh dill. May be thick at first, add additional water in 1 tablespoon intervals until desired consistency is reached. Season to taste with sea salt and pepper.

Prepare Kaizen rice according to package directions. Strain, rinse, and set aside.

Prepare blistered tomatoes. Warm pan over medium/high heat. Add 2 tablespoons extra virgin olive oil. Add whole cherry tomatoes. Toss gently to coat and allow to cook until blistered; stirring occasionally. Season with sea salt and pepper.

Assemble the salad: Add rice to serving bowl. Pour half of the dressing over top and mix. Add tomatoes, fresh herbs, chopped pistachios and pomegranate. Toss and serve. Use remainder of dressing for individual servings and enjoy.

Note: If you’re not able to get Kaizen rice you can substitute to a grain of your choice like farro, quinoa, or orzo.
